It's a strange thing to be away from home for a holiday
and for General Conference.
We experienced both, in one day, while vacationing.
With no room for Easter Baskets,
we used paper bags that they had decorated, this year.
I think the sweets helped them forget they were missing the usual component (Easter baskets) this year.
I had to keep reminding the girls to place their bags up and out of Boston's reach.
He enjoyed everyone's candy.
He didn't eat it all, but he would've if we let him.
Conference just wouldn't be conference without
Colorado Surprise Pancakes!
Here's the recipe:
Colorado Surprise Pancakes
1 c. cottage cheese
1 c. plain yogurt
Mix in a bowl and add:
3/4 c. flour
2 T. sugar
1 1/2 t. vanilla
4 eggs yolks *
Mix thoroughly. *Beat egg whites until stiff, then fold into mixture. Cook on a hot, oiled griddle.
We usually have to double this recipe, just to feed our family.
(my Dad found this recipe in the Newspaper a long time ago)
This is a tradition adopted from my family.
It's fun to know that they are being made and eaten all around the United States on Conference Sunday.
This year they were enjoyed in
Virginia,
Utah,
Arizona
and Hawaii.
